The most recent Penric, The Orphans of Raspay was published just this year, in case you didn't know. Though I have to admit it felt mostly like set-up for the next one, to me.
I highly recommend the first two Chalion books (The Curse of Chalion & The Paladin of Souls). They were both nominated for the Hugo, Locus, and Nebula awards, and Paladin actually won all three.
